Huevos Rancheros Breakfast Sandwiches

This is a simple yet delicious breakfast sandwich. It starts with toasted english muffins. Then you have to add your refried beans, salsa and avocado.

The goal of this sandwich is to spice up breakfast while keeping it fresh and interesting, all while trying to keep it as healthy as possible.

This is quick, hearty and easy to make. It gives you enough fuel in the morning to get your day going. The only downside is that it can get messy while eating so be sure you have a napkin handy.

huevos rancheros breakfast sandwich

Serves: 1

Ingredients:

  • 1 whole wheat english muffins, toasted
  • 1 egg runny
  • 1.5 tablespoons refried beans
  • 1.5 tablespoons avocado
  • 1.5 tablespoons salsa
  • 1/2 tablespoon chopped cilantro
  • Cheese (Optional)

Directions:

Take your refried beans and layer each english muffin slice. Then top it off with a fried egg, salsa, avocado and som cilantro.
