If I had to choose my absolute favorite vegetable, I would hands down choose Brussels Sprouts. I usually make Brussels Sprouts in the winter months, but one of my favorite Summer side dishes is grilled Brussels Sprouts. For this recipe, I coated the sprouts in a stone-ground mustard marinade before wrapping in foil and grilling. They turned out delicious-I’m loving the slight char on the edges of the leaves! The mustard gives the dish a nice bite, while the maple syrup gives it a little sweetness. This was a really yummy side dish to grilled salmon and potatoes. It came together in under 20 minutes, which is always a win in my book. In addition, when it’s cooked in foil, there are less dishes to do when dinner is over (double win!). I’m loving the grill so much this summer, I can easily see myself grilling well into the Fall. My pup loves when we grill too, because we hang out more outside. 12 ounces Brussels sprouts
1 tablespoon grapeseed oil
1 tablespoon stone ground mustard
1 teaspoon pure maple syrup
½ teaspoon garlic powder
¼ teaspoon sea salt
¼ teaspoon pepper
Preheat the grill to medium heat.
Cut the bottom off of each Brussels sprout. For large sprouts, cut in half. Place in a medium-sized bowl. In a small container, wisk the remaining ingredients together. Pour over the spouts and toss to coat. Transfer to tin foil and wrap to form a packet.
Place the foil packet on the grill and cook for 15 minutes, turning over half-way through the cooking time. Remove from the foil and enjoy!
